Southwest Breakfast Burrito

 

Makes 4 Breakfast Burritos
Large tortillas
8 Eggs, beaten
2 cups black beans
Baby spinach
Salt & pepper to taste
1 cup shredded cheddar cheese
1 cup Southwestern Sun-Dried Tomato Halves, sliced

 

Scramble eggs in a skillet and set aside. In same skillet cook beans and spinach, adding salt & pepper for taste. Remove from heat. Assemble burrito by placing tortilla on a cutting board. Add egg and bean/spinach mix to the bottom third of the tortilla, top with sun-dried tomatoes and cheese. Roll the sides of the tortilla into the center and roll up the tortilla, ending with the seem side down.
