Shrimp & Texas Sun Dried Tomato Sauce

 

½ C  CSD Tomatoes, chopped

¼ C  chopped onion

2 tsp CSD Garlic

2 tsp light brown sugar

1 T  CSD Spread

½ tsp cayenne pepper

2 T  red wine vinegar

¼ C  water + 3 T water

Salt & freshly ground black pepper

½ lb jumbo shrimp, shelled & deveined

Olive oil spray

 

 

Place 1st seven ingredients in small saucepan & bring to a simmer.  Cover & gently simmer about 10 min, remove & cool 5 minutes.

 

Puree in food processor & add ¼ C water as processing.  Add salt & pepper to taste.  Toss about 1/3 of the sauce with the shrimp, coat well.

 

Preheat oven to Broil.  Line a baking tray with foil & lightly spray with olive oil spray.  Spread shrimp on tray in one layer & broil 3 minutes, turning once, until just pink.  Add 3 T water to remaining sauce & serve in a bowl as dipping sauce.
