1 package frozen puff pastry, defrosted
½ C CSD Pesto
½ C crumbled goat cheese
½ C finely chopped CSD Tomatoes in oil, drained
¼ C toasted pine nuts
Lightly flour a board & unfold one sheet of puff pastry. Roll out the pastry to 9 ½” x 11 ½”. Spread with half the CSD Pesto, half the goat cheese, half the CSD Tomatoes, & half the pine nuts.
Fold each end ¼ of the way to the center, fold each side again almost to the center. Fold one side over the other & press lightly. Place on parchment paper lined baking sheet. Repeat with second sheet of pastry. Cover both with plastic wrap & chill for at least 45 minutes.
Preheat the oven to 400 degrees. Slice the prepared rolls into 1/4 inch thick slices & place them face up 2” apart on lined baking sheets. Bake for 8 minutes, turn over & bake until golden brown.
