Roast Garlic Chicken
1 (3-4 lb.) whole chicken
2 T. (+/-) CALIFORNIA SUN DRY® Garlic
1 large lemon
salt and pepper to taste
Preheat oven to 350 F. Rinse chicken thoroughly, pat dry. Cut lemon in half, removing seeds & squeeze ½ lemon juice inside chicken cavity.
Sprinkle salt and pepper on outside & inside chicken. Carefully loosen skin from chicken from breast & legs. Rub at least 1 T. CSDF Tomato Garlic underneath loosened skin. Rub entire chicken with remaining tomato garlic. Squeeze 2nd half lemon juice over chicken. Place squeezed lemon halves inside chicken cavity. Place on rack in roasting pan, breast side up. Bake chicken for 1 - 1/2 hours or until cooked through.
