Mediterranean Salad

and Sun-Dried Tomato Vinaigrette


6 T Olive oil
2 T CSD Tomatoes, jarred, in oil
4 tsp Apple cider vinegar
1 clove garlic
¼ tsp Sea salt
1/8 tsp Black pepper, freshly ground
2 C Grape tomatoes, halved or larger tomatoes chopped & drained
2 C Cucumber, large chop
1 C Artichoke hearts, chopped
1/3 C Red onion, thin slice
½ C Feta cheese, crumbled


In food processor or blender, puree olive oil, CSD Tomatoes, apple cider vinegar,
garlic, sea salt & black pepper until smooth. If too thick, thin with small amounts of oil
or water until of preferred consistency.


In a large bowl, combine tomatoes, cucumber, artichoke hearts & onion. Toss with
vinaigrette just before serving. Sprinkle top with Feta cheese & serve.
