Mediterranean Quinoa Salad

 

2 cups cooked quinoa 
1/2 cup Sun-Dried Tomato Halves, chopped
1/4 red onion, chopped
1 cucumber, diced
Feta, crumbled
Parsley, chopped
Dressing:
2 Tbsp olive oil
2 Tbsp lemon juice
2 cloves garlic, minced
1 tsp Dijon mustard

Whisk together dressing ingredients, season to taste with salt and pepper. Combine quinoa, sun-dried tomatoes, onion and cucumber in a bowl. Drizzle dressing over salad and toss to combine. Top with crumbled feta and parsley.
