Love Those Veggies


3-4 T olive oil, from drained tomatoes

1 C red onion, sliced

4-5 red potatoes, cooked in skins, cubed

¼ lb fresh green beans, steamed

½ C CSD Tomatoes, drained, chopped

¼ C green olives (optional)

¼ C black olives (optional)

¼ C Parmesan cheese, freshly grated


In skillet, saute red onion in olive oil 2 minutes. Add cooked potatoes, green beans, CSD Tomatoes & olives, heat through. Sprinkle with Parmesan cheese.

Serve Warm
