Italian Meatloaf
2 lbs Ground beef chuck
1 lb sweet Italian sausage, casings removed
1 medium yellow onion, chopped
2 T CSD Garlic
3 C fresh breadcrumbs
1 C flat leaf parsley, chopped
2 T Italian seasonings
2 C fresh basil leaves, chopped
4 oz CSD Tomatoes, drained, minced
Salt and pepper, to taste
2 eggs, lightly beaten
1/2 C tomato juice
1/2 C dry red wine
1/4 lb smoked mozzarella, thinly sliced
Combine first ten ingredients a large bowl. Add the eggs, tomato juice & wine,
mix thoroughly.
Place on aluminum foil lined baking sheet & form into a loaf. Bake 1 hour at 375°. Place sliced cheese on top. Bake until melted & bubbly. Serve hot or cold.
