Chicken Caprese Panini
1 block mozzarella, thickly sliced
1 bunch basil
1 bag Italian Sun-Dried Tomato Halves
1 lb boneless, skinless chicken breasts.
California Sun Dry Sun-Dried Tomato Pesto
8 slices sourdough bread
Salt and pepper to taste
Season and cook the chicken. Either thinly slice or shred it. Spread pesto on top of 4 slices of bread and butter the other side. Butter the remaining slices and assemble chicken, basil, and mozzarella on top. Put halves together and place sandwich in the frying pan, heating both sides until cheese is slightly melted.
