Better Than Grilled Cheese


4 slices sourdough bread
1 lb. fresh mozzarella, ¼” slices
2 fresh tomatoes, sliced thick
1 (8.5 oz.) jar CSD Pesto
Salt & pepper
Extra virgin olive oil


Heat a Panini press on medium heat. Smear CSD Pesto on all 4 slices of bread. Arrange tomato slices on 2 slices of bread. Season with salt & pepper. Layer the mozzarella slices over tomatoes & place remaining 2 bread slices, pesto side down, on top to make the sandwich. Drizzle olive oil on Panini press, place sandwiches inside & press. Turn after 2-3 minutes. Remove when golden brown & cheese has melted.

Options: add baby arugula or fresh spinach, thinly sliced
& cooked meats, prosciutto, sliced onion or sliced pear.
