Annette's Chicken Tortilla Pie

 

1 tsp  reserved oil from tomatoes

1 medium onion, chopped

1 tsp  ground cumin

2 Poblano peppers, seeded & chopped

1 tsp CSD Garlic

1, 18.8 oz can Campbell's Chunky Chicken Corn Chowder Soup

2 C  frozen corn, thawed

2 1/2 C  cooked shredded chicken

1/4 C  fresh lime juice

1 C  CSD Julienne-cut Tomatoes, drained

2 C  fresh cilantro, chopped

1 C  tortilla chips pieces

1 oz Pepper Jack Cheese, grated

 

 

Heat large skillet, medium, heat oil.  Add onion & cook, cover & stir often 5 minutes.  Stir in cumin, add peppers & CSD Garlic. Cook, cover & stir often, 5 minutes. Heat broiler.

 

Add soup & corn. Cook, stirring, 2-3 minutes. Add chicken & cook 2 minutes. Remove from heat; add lime juice, CSD Tomatoes, & cilantro.

 

Transfer mix to a greased, 8 x 8” casserole dish. Sprinkle with chips, then cheese, & broil until cheese melts & bubbles, 1-2 minutes.
