QUICK BLACK BEAN CHILI
You can add more sausage if you want a heartier chili. Or add more chicken broth to make black bean soup.
Serves 4
1 tablespoon vegetable oil
1/2 onion, chopped
2 large cloves garlic, minced
1/4 pound chorizo (Mexican pork sausage) or pork sausage
1 cup California Sun Dry Tomato Salsa
3 cans (15 oz.) black beans
1-1/2 to 2 cups low-sodium chicken broth
2 tablespoons minced cilantro
Liquid hot pepper sauce
Heat vegetable oil in a soup pot over moderate heat. Add onion and saute until softened, about 5 minutes. Add garlic and saute until fragrant, about 1 minute. Add sausage, breaking it up with a wooden spoon and cook until it just loses its pink color.
In a food processor or blender, combine salsa with 1 can black beans, drained and rinsed. Blend until nearly smooth. Transfer to soup pot along with remaining black beans, drained and rinsed. Add 1-1/2 cups chicken broth and cilantro. Season to taste with salt and liquid hot pepper sauce. Bring to a simmer and simmer 5 minutes to blend flavors. Thin, if desired, with additional chicken broth.
