PASTA COBB SALAD

Yield: 6 servings

12 oz. uncooked fettucini noodles
1/2 cup CALIFORNIA SUN DRY® Julienne Cut Sun-Dried Tomatoes
2 hard-cooked eggs, sliced
1 firm, but ripe, avocado, chopped
1/2 cup Bacon Pieces
3 scallions
1 cup CALIFORNIA SUN DRY® Sun-Dried Tomato Salad Dressing
4 oz. shredded cheddar cheese, for garnish

Prepare fettucini according to package directions. Stir in sun-dried tomatoes, hard-cooked eggs, avocado, bacon pieces, scallions, and dressing. Chill. If desired, top each serving with shredded cheddar cheese.
