Tortellini Salad Toss
Yield: Serves 4
1 to 1-1/2 lb cheese tortellini
1/2 cup California Sun Dry Julienne Cut Sun-Dried Tomatoes
1/2 cup feta cheese, cubed
1/2 cup black olives, halved or sliced
1/2 cup red onion, sliced
1/2 cup California Sun Dry Sun-Dried Tomato Pesto
salt and pepper to taste
Cook and drain tortellini, according to package directions.
Toss all ingredients together in a large serving bowl. Chill. Enjoy!
