GARLIC ROASTED RED POTATOES

Prep time: 15 mins.

2 lb. red potatoes, with skins, cut into wedges
3 tbsp. CALIFORNIA SUN DRY Sun-Dried Tomato Garlic
2 tsp. olive oil
1/2 tsp. salt
freshly ground pepper

Preheat oven to 450° F. In a large bowl, mix together potato wedges, tomato garlic, olive oil and salt, unitl potatoes are well coated. Lightly oil a shallow roasting pan with 1 tsp. olive oil. Spread potato mixture in an even layer in roasting pan. Sprinkle with pepper. Bake 40 mins. or until potatoes are golden brown and cooked through, turning once midway through baking.
