TRI-TIP WITH SUN-DRIED TOMATO MARINADE

Yield: 4 servings
1/2 cup white vinegar
1 cup CALIFORNIA SUN DRY® Julienne Cut Sun-Dried Tomatoes without oil
4 tri-tip steaks (8 oz.)
3 cloves fresh garlic
1/4 cup olive oil
1 tsp Italian herbs
sea salt
freshly ground black pepper
Add sun-dried tomatoes to vinegar, and let soak for 15 minutes.
Crush the fresh garlic and mix with olive oil, herbs, salt and pepper. Add sun-dried tomatoes and vinegar.
Add tri-tip steaks and marinade to a pan. Let simmer for 1/2 hour. Transfer to a broiling pan and broil under medium fire until browned.
To serve: Arrange steaks on a serving platter, reserving marinade. Toss marinade with spinach leaves and serve on the side.
Variation:
Use 1 cup sun-dried tomatoes in oil. Omit the olive oil and herbs, and use the oil from the jar of sun-dried tomatoes instead.
