LASAGNA ROLL-UPS

Yield: 6 servings

1/2 lb ground beef, or other meat
1 clove garlic
1 tsp chives
1 tsp parsley
1 tsp oregano
3/4 cup tomato paste
1 cup sun-dried tomatoes
1 cup mozzarella cheese
1cup cottage cheese
2 cups cooked spinach
1 lb. lasagna noodles

Saute ground beef with garlic, chives, parsley, and oregano, until cooked through. Set aside.

In a blender or food processor, blend tomato paste and sun-dried toamtoes. Add to ground beef, and mix together. In a separate bowl, mix together cheeses and spinach.

Spoon meat mixture over 1 lasagna noodle, spreading evenly over entire noodle. Top with cheese mixture. Roll noodle into a spiral. Place in baking dish. Repeat with remaining noodles. Cover roll-ups with tomato sauce. Bake in 375 oven for one hour.
