Chicken with Sun-Dried Tomatoes in Cream Sauce

Yield: 4 servings

3-4 skinless, bonelss chicken breast halves, cut into 1/2 in. strips
2 tbsp. unsalted butter
2 tbsp. olive oil
2 tbsp. flour
1/4 cup onion, chopped
1 1/3 cup whipping cream
1/2 cup dry white wine
1/3 cup chopped drained sun-dried tomatoes
2 tsp. dried basil 8 oz. cooked linguine

Melt butter and olive oil in large skillet over medium-high heat. Season chicken with salt and pepper. Add chicken to skillet and cook until light brown and cooked through. Add onions and sauté 1 minute. Sprinkle flour and mix well. Add whipping cream, wine, sun-dried tomatoes and basil. Bring to a boil. Cook until thickened. Season to taste with salt and pepper.
