Try something different, with a Cajun twist!

REDFISH WITH SUN-DRIED TOMATOES AND WINE

4 fresh redfish fillets
3 cloves garlic, minced
1 tbsp. California Sun Dry Sun-Dried Tomato Garlic
Cajun seasoning
1/4 cup finely chopped California Sun Dry Sun-Dried Tomatoes in oil
1/2 cup White Zinfandel wine

In a large, nonstick skillet, heat sun-dried tomato garlic and minced garlic. Saute about 30 seconds. Season fish with cajun seasoning, to taste. Heat to medium high and place fish in skillet. Add sun-dried tomatoes. Brown fish and turn it over. After a couple of minutes, add wine and simmer until fish is cooked through.
